Here are a few of my favorite things from this past week:
1. “”If we confess our sins, he is faithful and just to forgive us our sins, and to cleanse us from all unrighteousness” (I John 1:9). What a blessed promise; what a wonderful God to make such a promise.
2. These heart-shaped pancake molds
with which I made these heart-shaped peanut butter pancakes:
3. Family moments like these: Jeremy showing Grandma a funny video. Though she would be intimidated to try to use a computer, she’s fascinated when someone shows her something on them.
4. A good report from my first ever bone density test (to ascertain whether one is headed for osteoporosis), one of those over-50 things doctors want to do. Apparently my bones are in great shape!
5. I saw this short video on a friend’s Facebook page about someone who goes back to work after 20+ years and finds the equipment has changed…
Cracked me up!
This epitomizes anticipation and bliss — I especially love the expression about 57-58 seconds in.

Peanut Butter Pancakes
1 cup all-purpose flour
2 Tbsp sugar
2 tsp baking powder
1/2 tsp salt
1 beaten egg
1 cup milk
1/3 cup peanut butter
1 Tbsp vegetable oil
Heat a griddle or heavy skillet over medium heat.
In a medium bowl, combine the flour, sugar, baking powder and salt. In a large bowl, combine the milk, peanut butter, egg, and oil. Whisk until smooth. Combine the flour mixture with the milk mixture and gently stir until just combined.
Melt margarine or spray non-stick spray on the heated griddle. For each pancake, pour 1/3 cup batter onto griddle. Cook until golden brown, turn when the edges are slightly dry.
Yields 8 pancakes.
I add a little more milk to make them thinner and lighter and get more like 12 or so pancakes.

Oh those peanut butter pancakes sound (and look!) quite wonderful. I have some pancake molds that we got for Bookworm1 (a plane and a car) and I confess I haven’t quite mastered the trick of them. I like the theory in concept. But there are windows on the plane!!! I can’t quite figure out how to make them work! Do you put the batter into the form? I’ve just resorted to cutting it out after I’m done cooking them.
That video of the lady going back to work after 20 years is HILARIOUS! I burst out laughing.

Oooo…pancakes…hmmm? Maybe I can talk my Loverbrains into making them tomorrow morning. He “traditionally” makes Sat. morning breakfasts and let’s me sleep in! They won’t be heart shaped…but they will be full of LOVE!

Mmmmm…. I used to make peanut butter pancakes when the kids were small — I haven’t made them in YEARS! I’m not going to now either – but I’m going to remember them fondly!

I love 1 John 1:9, too. A great verse to remember often. Very cute pancake molds. Looks like something my m-i-l would have; she always has neat kitchen things. Glad you have good bones!

I’m lovin’ that heart shaped pancake mold! I want one! Grandma at the computer reminds me of my mother (she’s 80). I spent an hour one day showing her how to do email and even wrote out the instructions. She hasn’t sent one email and wants me to show her again how to do it! Have another blessed week!

Okay, I’m a “peanut butter kinda gal” so know I would love those pancakes. Thanks for sharing the recipe, never heard of them. Oh, the fun of blogging, never know what you might find out and learn how to do. I love it! Blessings galore to you!

We’ve spread pnut butter on top of our pancakes before but I’ve never found a recipe that actually puts it right in the batter. I’m so trying this out.
I love when my kids show my mom stuff on the computer too. She has no clue about them but likes when she is shown pictures and stuff on it too. The day she first put headphones on and we helped her use Skype to talk to my oldest daughter was worth it just for the picture.
I love the expression on their faces! LOL! And I want some of the heart-shaped pancakes too.
