Wednesday Hodgepodge

Joyce From This Side of the Pond hosts a weekly Wednesday Hodgepodge of questions for fun and for getting to know each other.

Here are the questions for this week:

1. Do you and your family enjoy camping? What do you enjoy most/like the least when it comes to family camping? When was the last time you camped?

We camped a good bit when the boys were younger. I think my last camping trip was when I was expecting Jesse. After TM (and now middle age) I would have a hard time getting up from sleeping in a sleeping bag on the ground and would not enjoy hiking in the dark with a flashlight to the bathrooms in the middle of the night. Things I liked: family togetherness without distraction, letting the boys feed bread crumbs to the ducks in the lake, my husband’s camp cooking, the taste of food outdoors, sitting around the campfire at night making s’mores. What I didn’t like: all the preparation beforehand and cleanup and putting things away when you get back home, waking up damp from dew, bugs, not being an outdoorsy sort of girl in the first place, the aforementioned nighttime bathroom hikes, sleeping on the ground. And this might sound irrational, but I also felt a little exposed and unprotected in a tent. Unprotected from what, I don’t know. Bears or crazy people wandering in the woods at night. I like actual walls and doors with locks. Multiple locks. šŸ™‚ Jim took the boys on a yearly father-sons camping trip for a number of years, and they enjoyed that. One year I went out with them for the evening while we ate and visited for a while and then I drove home while they slept at the campsite. We’ve talked about the possibility of RV camping (at least the bathroom would be right there!), but those are expensive and pretty cramped from what I have seen. I could see maybe occasionally renting a little cabin in the mountains or on a beach, but that’s probably way expensive, too.

2. Did you attend a summer camp when you were a kid? Is that a happy or not so happy memory?

I attended Girl Scout camps a few times as a child and then church camps a couple of times as a teen. They were overall happy memories.

3. Over the course of your life, what have you probably spent more time pondering than anything else?

I spent years wrestling with assurance of my salvation.

4. Which of the seven natural wonders of the world would you most like to see? There are many lists of ‘wonders’ but this is the standard natural wonder list-Mount Everest, The Great Barrier Reef, The Grand Canyon, Victoria Falls, The Harbor of Rio de Janerio, Paricutan Volcano and The Northern Lights.

Hmm. I don’t know. Maybe the Northern Lights?

5. What was your first real job?

I think baby-sitting is a real job, and I had a very short stint at a fast food place and a longer one at the bakery department of a grocery store. But my first jobs as a grown-up was at the library at college and then one summer at the bookkeeping department in a bank where my mom was assistant head bookkeeper.

6. Lemonade or Sweet tea…which do you prefer on a hot summer day?

Unsweetened tea. No lemon.

7. What is something that always brings a smile to your face?

Malapropisms, especially in church. There are times when the pastor will unintentionally confuse words with a funny effect, and I just can’t look at my husband when that happens because I know he will probably have caught it, too, and if I look at him and see him smile, I’ll probably laugh at loud. And of course now I can’t think of a good example of one…

8. Insert your own random thought here.

I’ve been thinking we should probably eat more fish, but I don’t eat it often enough to remember which kind I like, and I only know one way to cook it: baked with a little butter, salt, pepper, onion, and garlic powder. That’s fine but I’d like to learn some other ways of making it. What’s your favorite fish, and how do you prepare it?

  1. I have two really good recipes for marinades that are wonderful on salmon. Then we just pop it on the grill or in a high heat oven for a few minutes. The guideline is ten min per inch.
    I also have a wonderful poached recipe made in a pan on the stove-easy and my whole family loves it. I use cod, flounder or some other white fish for that one. If you send me your email (jdpres07@googlemail.com) I’ll look up the recipes and email them to you. They are both yummy and I’m actually making the salmon tonite.

  2. My family calls it Cajun Catfish…but I actually use Tilapia and bread it lightly in a couple cups of cornmeal with 2 T. of Cajun Spice…and then fry it in a skillet with a bit of EVOO til they’re nice and crispy…Yummo!!

  3. Funny I’m going camping this weekend. I love it. Yeah you aren’t protected and in the back of your mind you always wonder. I’m with you there. I love fish. Raw is my favorite. Ahi Sashimi is the bomb!!! Some of course has to be cooked. We also like to steam it with butter, mayo, lopchong, onions and whatever else over the grill…mmmm If you ever get over here or I get to TN I’m making ya some šŸ™‚ Well will have someone that knows what they are doing do it for ya LOL šŸ™‚

  4. I so wish I liked fish. Can’t stand the taste of it and my husband is deathly allergic to it. It’s so healthy too!!! No wonder I can’t lose weight – I’m sure my weight would drop like a rock if I could eat fish šŸ˜‰

  5. Malapropisms in church, next to a hubby who catches them, too, is disastrous. We can’t keep our shoulders from shaking . We also crack up at mispronunciations. Once we had a pastor who was an avid reader ,but didn’t always hear the words first before using them. ;They were always in context, though. One of them is cumulative, which he pronounced ‘cuh-MUHL-a-tive,” and the other is “epitome.” He made it 3 syllables “ep-pee-tome.” To this day, my husband and I will say things to each other like, “Wow, the cuhMULative effect of eating so much junk food in a week is catching up with me . I’m the EPPYtome of sluggishness.”

    As for a fish recipe, we like mahi mahi , but the favorite is orange roughy –very, very mild, and is perfect with lemon and pepper. With the mahi I make Poor Man’s Lobster, which has a sauce of white wine, garlic, butter, lemon, and salt. Yum.

  6. Scallops! Expensive but tasty. Sautee in butter, shallots & garlic. Yum.

    On our last camping trip we ate all three meals in camp, then at night fall left the kids to their tents and retired to our motel (only 2 stars, we were roughing it). šŸ˜‰

Oh, I”ve definitely learned to control my reaction when my pastor says a word incorrectly while teaching or preaching, but i almost always say something to the hubs about it on the way home. šŸ™‚ One that he does is pronouncing the “B” in subtle. And instead of saying subtlely, he says subtility. BUT it is a small thing really and we just love him the way he is!! šŸ™‚ (His wife has been known to correct him, she’s told me….but usually to no avail! LOL)
    As for the fish and how you might fix it…….I dip the fish in an egg/milk mixture, then gently dredge each piece in a cornmeal mix. It is actually Martha White’s self-rising cornmeal mix. Ed had accidentally bought a bag of this cornmeal MIX for me when what I actually wanted was just plain cornmeal. But, then, one day when I was preparing fish for dinner, I just thought I would try breading it with this cornbread mix. It was wonderful. It is light and gives the fish just the right coating and when fried in just a little light oil, is absolutely delicious!!! šŸ™‚ Hope this helps!!
